		<description><![CDATA[Another fantastic use for leftover mashed potatoes is using them as the crust to a quiche--such as this Broccoli Quiche with Mashed Potato Crust (from http://allrecipes.com/Recipe/Broccoli-Quiche-with-Mashed-Potato-Crust/Detail.aspx). This one goes over well with everybody for a delicious breakfast or lunch the next day--I usually omit the nutmeg, though, and use an extra egg to make it heartier.]]></description>
