This is a great idea! I love ratatouille (in Hungary we have a very similar dish called lecsó) but I can never get over the feeling that veggies alone aren't filling enough. With a flaky crust, I'm convinced :)

When making ratatouille I remember EZ-POT as the order in which to add veggies: eggplant, zucchini, peppers, onion, tomatoes. I think those are also pretty much the traditional veggies.

Sorry to be a nit but it's a pet peeve of mine to use the name of a traditional dish and then say you can use just abut any ingredients for it.
Ratatouille contains specific items, with some regional variations sure, but you can't go eliminating the essential ingredients and call it Ratatouille. Call it something else.
And ratatouille never gets a pizza dough topping. Ever.
Make up a new name :)

This looks great! I'd think you could throw a can of beans or some lentils in there to up the protein. Might put this on the menu for next week.

Thanks! I always love the Dinner with my Family posts. :)
