Trent - can you please do a post on how you bake that bread. I make bread sometimes and it comes out pretty well, but it takes me far more than 20 minutes of active time. I'd love to learn how you do it. Thanks!

I bake bread often and can recommend freezing the fresh loaves cut in medium sized chunks. That way you can thaw just as much bread you need (10-30 sec in microwave + let it rest for a couple of minutes) and not worry that the bread will go stale. I thought previously that freezing will affect bread quality, but it really doesn't!

I read Wheat Belly a while ago. I am mostly convinced that wheat is not good for us. I still eat some bread because I like it, but VERY little. The plus side is I spend a lot less time baking bread :)
